Pulped Natural & Honey Process Coffees From Ozone
Sweet and balanced, that's the honey and pulped natural signature. White honey sits close to washed: light, clean, barely any of that syrupy weight. Black honey goes the other way, dense and fruit-forward, closer to a natural. Red and yellow honey sit somewhere in between. The process starts like a washed coffee. A machine called a demucilager strips the skin off the ripe cherries, but it can be set to leave different amounts of the fruit's flesh, the mucilage, behind. That leftover mucilage gives each level its name: white honey has almost none left on, yellow a bit more, then red, then black, which keeps just the skin removed. The beans dry in the sun with that mucilage still on, then get cleaned by machines at a dry mill. Read our full guide to pulped natural and honey processing for more.
