Washed Process Coffees From Ozone
Clean and bright with more acidity, that's the washed process signature, though it varies by origin and lot. Washed coffee beans are the specialty standard for a reason: the process strips away variables, so what's left in the cup is closer to the bean and terroir alone. A freshly picked coffee cherry needs its fruit removed to get to the seed inside, the coffee bean itself. Washed processing does this with a machine called a depulper, which strips off most of the fruit, then leaves the green bean with its mucilage, the leftover fruit flesh, sitting in water. The mucilage breaks down and washes away, leaving just the green bean behind. There are plenty of variations on this, smaller or larger volumes of water, fresh water swapped in partway through, but all of it falls under washed processing.
